Cooking Slump

Help! I've fallen into a cooking slump and I can't get up! Every Sunday, I make my grocery list for the week and put together a menu based on what I'm buying (and what I have on hand). I have all my tried and true recipes in a three ring binder and I'm getting tired of them all! I've just spent the last hour looking online for new recipes, and haven't come up with much. So, I need your help! Please, kind friends, if you love me, send me a recipe! Something not too complicated that uses normal ingredients that kids will eat that doesn't contain dairy is all I ask. Thank you!

  2. Here's a quick and easy one that Jared really likes...and he's picky.
    You can either stick chicken in a crockpot with salsa or you can simmer it covered in a pan on the stove for around 30 minutes or until it's shreddable. Then we make tacos, have it on rice, put it in enchiladas, make lettuce wraps,put some pepper jack cheese on it and put it on hamburger buns, whatever you can think to do with it... Really easy,quick, and quite versatile. We actually blend our salsa too and it brings out the flavor more.
    Here's another easy one...I'm all about the easy since cooking dinner is the last thing I want to do after working all day.
    Buy thinly sliced roast beef, au jus, provolone cheese, and hoagie rolls. Make the au jus and put the beef straight in it, cook until hot. Put the cheese on the hoagies and put them under the broiler to warm and crisp them. Easy french dip, and not very expensive either.

  3. Thanks, Katie! I haven't done the chicken one in a while, so I'll have to try it again. My incredibly picky kids didn't go for it last time. I've done french dips quite often and they're a big hit. I have a crock-pot french dip recipe using a rump roast which is also very good. Here it is if anyone is interested:

    4 lb. rump roast
    1 10.5 oz can beef broth
    1 10.5 oz can condensed french onion soup
    1/4 c. soy sauce (or 1 12 oz. bottle beer, if you're so inclined!)

    Trim excess fat from roast and put in slow cooker. Add beef broth, onion soup and soy sauce (or beer) Cook on low for 7 hours.

    Slice and serve on toasted french rolls using the sauce for dipping.

  4. I make rice pilaf almost every week--it's easy to do on the stove, or even easier if you have a rice cooker (which we just got).

    1 cup brown rice
    1 cup white rice
    1 cup wild rice blend
    6 cups chicken broth
    1 can mushrooms (or not) :)
    1 can canned chicken (or turkey)

    Steam above ingredients for 45 minutes; while it's cooking, toast 1/2 cup slivered almonds.

    Stir in: 1/2 cup toasted slivered almonds
    2 Tblsp chopped chives
    4 Tblsp lemon juice

    We eat it with steamed broccoli, or butternut squash, or any vegetable that's in season. Low cost, low effort, little meat, no dairy, no gluten, healthy. :)

  6. I'll email you a list of our favs. I'm with you, though. I get so tired of making the same thing over and over and over . . . Outi & I were just complaining that it seems like all we ever cook is a hunk of meat and a vegie. Gets dull really fast.

  7. You should check out my friend Kate's blog, it's all about cooking and fabulous recipes. You may have to search back a bit though since she's been taking a break from posting recipes since she's busy with showcasing their house since it's on the market now. I've yet to try them since I'm not that adventurous but they all sound delicious.

  8. Jenny...I'm there too!
    We love "Katie's" idea...we do the chicken enchilada's every two weeks, my kids love it. I will grill chicken breast for dinner one night and always do extra and have soft taco's later in the week. Once a month I do chili and we have it over potatoes or as a taco salad "like Wendy's). Jim loves flank steak (not too expensive, esp at Costco) and we have steak burritos and then steak sandwiches. Oh and one more...the kids love to have breakfast for dinner...eggs, bacon and toast (make extra bacon for blt's later).
    On those crazy nights it's take out....or my kids love top roman...I feed them their vitamins right?
